Periquita Clássico 2014 is a red wine from Portugal's Setúbal Peninsula, produced by José Maria da Fonseca. This wine is crafted exclusively from the Castelão grape variety, sourced from clay-limestone soils. The vinification process involves fermentation with stems at 28ºC, followed by aging for 24 months in used wooden vats. Bottling occurred in July 2018, with a total production of 6,400 liters.\n\n\n\nPeriquita Clássico tries to replicate the style of the old Periquita wines, from fifty years ago, when the grapes were fermented with the stems and the vinification temperature had little control.
