Susana Esteban Sidecar Sparkling Wine 2020 75Cl - DOC Alentejo

This is a very special wine produced with incredible grapes from the century-old vineyards of Serra de São Mamede. Emmanuel Lassaigne accepted the challenge of making this wine and it was the first time he had made a wine outside his own production. For fermentation and aging, we used 2 barrels from Champagne, and the wine was made without any addition of sulfites as Emmanuel does in his winery to produce its famous Champagnes. The tirage was done using the traditional method and the disgorgement was done with the method “a la Volée” by Emmanuel Lassaigne himself 2 and a half years later. A unique and unrepeatable wine.
